Cozy Chili Recipe

I have to say it always feels bitter sweet when the kids go back to school. It’s nice to have the routine but it’s not nice to have the routine. Am I right?! I am looking forward to cooler temperatures and the leaves changing colors. 

As the shorter days and cooler weather approaches, the urge to bake and make more hearty meals ramps up. Soups, chili and grilled cheese sandwiches, chicken pot pie. I could go on!

With the kids back in school I am trying to meal plan again and get myself better organized in that area! (More on that in upcoming post) It’s frustrating to not have any idea what to make for dinner and/or not have all the ingredients for something I see on Pinterest! 

The temperatures are going to be in the high 70s for the next week, so while the  “comfort foods” are calling we are not quite there yet.

Tonight we are having chili with grilled cheese sandwiches. I didn’t make this in the crock pot this time but you certainly could.

This recipe tastes even better the next day… if there is any left over!

Cozy Chili Recipe

This is my go to Chili Recipe. This versatile recipe can be adjusted to whatever ingredients you have in your pantry. Pairs wonderfully with sour dough grilled cheese sandwiches!

Prep Time 15 minutes
Cook Time 30 minutes
Servings 4 Servings

Ingredients
  

  • 1 Pound Ground Beef I prefer Lean
  • 1/2 Yellow Onion Diced
  • 1/2 Red or Green Pepper Diced
  • 1-2 Teaspoons Diced Garlic
  • 15 Oz Canned Petite Diced Tomatoes
  • 15 Oz Canned Tomato Sauce
  • 12 Oz Dark Red Kidney Beans
  • 4-5 Tablespoons Chili Powder
  • 1 Tablespoon Dried Oregano

Instructions
 

  • In a pot cook onion and pepper until soft
  • Add ground beef, season with salt & pepper or I like Jane’s Crazy Mixed Up Salt and cook until browned
  • Drain ground beef and return to pot
  • Add diced tomatoes, tomato sauce & dark red kidney beans along with chili powder and oregano
  • Simmer uncovered for 20 minutes stirring occasionally

Notes

Serve with your favorite toppings-We like sour cream, sharp shredded cheddar cheese & green onions. Chili-Cheese Fritos are good on top too!
